I've set up a store successfully with 3747 products, with no problems. It really depends on the size of your MySQL database..
I figured with that many products, the search features would run slower on this site, but they run fine..
I have a internal test server here running at the office with almost 6 million products in it,.
Note that the server is on a.
-dual xeon processor 3.0ghz.
-2 gig ram..
-10,000 rpm drive..
I can honestly say that the shop runs as fast as if I had 20 products in it..

Crikey! 2.9 million products? How long did that take to program?..
*grin* I understand that, but at some stage in the lifespan of those products somebody had to put them in the computer in order to 'import/export' I'd imagine. Seems like a tough job to do. My products count in hundreds and that's taking a long time to get setup, so I can only image.....
On a similar note, how would I go about limiting the number of products allowed in a store?.

Most people with that many products have access to CVS files or somesort from there suppliers,.
We have 9 different suppliers totaling over 6 million products, and we can easily update our entire database in a matter of 3 hours or less..
We are even in the process of having multiple read connect strings to each of our suppliers databases's so that our database gets updated "live" with our suppliers database. (meaning we never have to input products or doing updates.).
So, how do you import a cvs database?.
Exists a database model?.

May I step in and ask another question....
I am running into problems (totalling >10000 products) where one of the 'new product' queries begins to wine about setting an option SQL_BIG_RESULT=1..
Since I cannot change any options for mySQL (I must use the webbased interface, have no command-line version available), how I am to put this into the tep_db_query() function or ... where...???.
Any help is appreciated!.

It is going to depend on MySQL and the server you are running's capability to keep up..
I have seen osc stores with well over 3000 products that ran pretty smooth. Mysql is pretty solid, I have other types of databases running on it with 100's of thousands of records..
