I almost forgot, you can use the STS Contribution to change the overall layout of the page. I recently installed this and it works really well and is much easier(for me anyways) to do rather than trying to handcode it into the index.php file..
And where can I get it and how do I use it???..
This is pretty much the same deal as with your main text but you need to look for the php files located in the same directory /catalog/includes/languages/english. They will be named similarly to the information links. Like shipping.php and privacy.php. To answer the question of changing the link names directly, look in the english.php file and you will find a ton of names defined there which you can edit to your liking (located in /catalogs/includes/languages).
For contribution information you can search the forums for STS Contribution or just STS, you can do this simiarly for any of your questions as lots of these have been asked before, or you can go to the oscommerce.com homepage and look for the link to the Contributions as well..
How does one remove the oscommerce logo and the words oscommerce on the main page?.

I checked your iPage site and it looks like you already figured out how to remove the logo and replace it with your own. But in regards to changing the information on the main page go to /catalog/inlcudes/language/english(for you english language pages)/index.php and open that file with notepad/wordpad or if you have dreamweaver mx or dl phpedit from the web. You can write the information you want to display in a wysiwig html editor like dreamweaver and then past the code into the php file upload and you should be good. Below is a simple example from the index.php..
Define('TEXT_MAIN', '<font size="2" face="Verdana, Arial, sans-serif" font color="#FFFFFF"> <b>Add your information here!</b></font>');.
Rember to use a slash to null out the apostrophes or you will get parse errors. Like this \'s..
